I know! I hear ya. I would have never believed it myself if we weren’t living proof.
Whole Grains Should Be A Staple of A Healthy Diet = False
Here’s the short story. The Standard American Diet (SAD) consists of mostly grains, and grains don’t provide a whole lot of bioavailable nutrients. We would be in better shape if we all ate ‘that devil meat and potatoes diet’ that we’re always being accused of wrecking our health with.
The nutrients in grains are all stripped away when in their ‘white’ processed form. To make them ‘healthy’ again just eat whole unprocessed grains, right? That’s almost worse because those little plant seeds come with some serious anti-nutrients and cause damage to those with less than ideal digestion.
There’s a reason grains don’t naturally nourish our bodies.
Plants use chemical warfare as their survival mechanism. Their seeds (grains in this case) are meant to travel safely through the digestive tract of animals to be ‘deposited’ somewhere else to grow. No seeds = no future plants.
Anti-nutrients in grains inhibit our natural digestive enzymes, block iron absorption, and bind with good nutrients already in our bodies like much-needed magnesium to then carry them out of your body via the colon (hey wait, I needed that!).
Your body then has to use other vitamins and minerals to try to minimize the harm that the anti-nutrients are causing. It grabs calcium, Vitamin C, and others to neutralize the damage thus enhancing nutrient depletion.
Bacteria Causes Tooth Decay = False
With all of our dental cleanings, sterilizing mouthwashes, and flossing, why are our teeth getting worse instead of better? Bacteria contributes to tooth decay in already weakened and compromised teeth. It does not cause decay in healthy teeth.
Dr. Weston A. Price was the first person to discover this theory of healthy teeth and nutrient-dense diets. His findings have been proven time and time again by doctors, researchers, and everyday laypeople who have permanently healed their teeth.
I went on a strict elimination diet in 2008 when my daughter was 3 weeks old and limited myself to very few foods based on growing number of foods she reacted to (hence this blog’s original name: 20 something allergies and counting…).
During this time, I had my first cavity ever…five of them. Katie’s teeth were also in bad shape. My husband blamed her oral hygiene routine (the standard dentist fallback answer), but I knew there was more to it. There were too many health issues to not be all linked.
17 months into a grain-free, nutrient-dense diet and Katie’s cavities have halted their severe decay.
She can now have small amounts of raw dairy and fish, so we have started an intensive routine that uses ultra nutrient-dense foods to heal cavities. Mine are small, so I’ll work on them next.
Those of you familiar with the real food world may cry foul and note that you can eliminate many of the anti-nutrients with properly preparing grains. Yes, if prepared properly, you can remove much of the problem. Our modern methods of doing so are not thorough enough.
To reduce (not eliminate) the anti-nutrients like phytic acid, most grains need a lengthy and involved multi-step process. Different combinations of soaking, sprouting, fermenting, and roasting are the best way to make sure most of the anti-nutrients are removed.
For people with healthy guts that have no health concerns, grains can be a normal part of any diet that focuses on nutrient-dense foods. For the rest of us, they should really hit the road.
