The menu plan was so hard to do this week. I had to put the whole project down yesterday and come back to it after a night’s sleep. It took me hours to wring out the meals and snacks from the kitchen inventory list, look through recipes, and then make a grocery list that squeezed every penny as far as it would go without compromising on the foods I wanted to incorporate into our diet this week.
I’m happy to say that I never even thought about giving up and chucking the idea of writing one! That must be confirmation that menu planning has become a habit. :happy dance: WOOHOO!! Ahem. Anywho…
The only recipe I ended up using was the garlic vinaigrette from Simply Summer. Katie reacted to something she ate this week with bellyaches, emotional oversensitivity, and hiccups. She will stay away from spices and new recipes (other people’s) this week to let her body heal. I’m afraid that coconut may be our culprit. We will do one more trial with the new tester muffin recipe, and then I’ll be able to determine if that’s it.
New recipes are on the horizon to tempt your palate, and you will see them noted in the menu plan as “tester recipe”. Once they get a green light, I will feature them on the blog. We’re very excited to have an extra reason to stuff our faces over here!
There is also a new and improved format for the menu plan to make it more visually appealing and easier to read. Let me know what you think – features that work for you, colors that don’t, easier/harder to read, etc. -. Any suggestions or comments are welcome!
